Could still be eating this one!

Hello, I usually pick up the "Whole Deal" newsletter when making my Whole Foods run.

It's packed with recipes and other good food related articles.

How happy I am to have stumbled across their recipe for their version of shrimp & grits.

Maybe it's the scent of bacon the recipe left lingering in the air, or the creaminess of the grits, or the spiciness of the shrimp? I can't decide so I'll leave it up to you!

Please try this one, you will not be disappointed. The recipe is not hard at all! You can get the shrimp frozen and peeled at Whole foods for 8.99 per lb.

Slackin on my Mackin


Hey Guys, I've been slackin on my recipe posting but definitely haven't slowed down in the kitchen! I just bought two new cookbooks tonite!! Anywho this recipe is a recent winner from the May/June issue of the Weight Watchers magazine.

I used boneless skinless chicken thighs and red skinned potatoes (they're healthier than white fleshed). On the side I roasted some green beans with olive oil, salt, pepper, during the last 10-15 minutes the chicken was cooking.

I really liked how much flavor the chicken and potatoes had. I also did the second step the recipe advised was optional, which was adding a navel orange the last few minutes of cooking.

Next Food Net work Star Crowned!

Hey Guys, it's bittersweet that one of my favorite reality shows has come to an end for a season but the good news is the winning contestant has been added to the Food Network family and will be starring in her very own show which airs this Sunday. It is called Ten Dollar Dinners and premieres Sunday, August 9, at 12:30pm eastern time.

I am really happy with the choice, and Melissa is someone I definitely look forward to learning new tips from.

Below you will find a link to her pilot show that was the winning ticket for her on the finale episode of the show. It features her self created "4 step chicken" which I tried tonight with red peppers, onions, and garlic as my aromatics. It's a winner in my book!

Quick & Easy

Hello!

Sorry I haven't posted in a while. I definitely have tons of recipes to share. Wanted to get this one out to you asap with more to follow!.

Here's a dish my friends that can be prepared in under 15 minutes start to finish and it's good for you and your family (the nutrition info can be viewed when you click the link). Hey, who needs a 30 minute meal when you can make one in half the time!

If your not a cous cous fan substitute white or yellow rice prepared in chicken broth as your liquid rather than water (instant flavor boost!)

Try using a chicken cutlet rather than a full chicken breast.

Good for you food that tastes good!



Well if you've talked to me in the past couple of days you know I've been cooking up a storm trying out recipes from my new favorite chef & nutritionist, Ellie Krieger. The name of the book is The Food You Crave, I checked my copy out from my local libray but it's on my wish list to purchase soon. Please give this one a try! A speedy & healthy version of jerk chicken. The chicken is cooked on the stove top rather than slowly in the oven and calls for lean chicken breast. I recommend butterflying the chicken before pounding it.


Try serving it like I did with her side dish recipe for mashed sweet potatoes with orange essence. They are a new take on sweet potatoes which is always a healthy option.


Top it off with some roasted asparagus. (Drizzle asparagus spears with olive oil & salt and pepper and roast at 400 for 10-12 minutes)


A tropical dinner in the middle of winter...sounds like a hot ticket to me! If you try it post your comments and let me know what you think.

Never to buy Pancake Mix again!


So, I recently checked out Ellie Krieger's cookbook from the library, so far I am in love with every single recipe I've tried. This one takes the cake though...the pancake! ( I crack myself up!) It is a half all purpose flour half whole wheat flour concoction that makes the fluffiest pancakes I've ever tasted. Not to mention they are an excellent source of nutrition loaded with calcium, fiber and other essential nutrients. The recipe yields 12 pancakes and 3 pancakes with the accompanying strawberry sauce are only 310 calories! Now that I have whole wheat flour as a pantry staple why would I ever need to buy a store bought mix loaded with junk I don't need. It also passed the hubby test, he loved them!

Move out the way Rachael Ray, Ellie Krieger's becoming my new fav celebrity chef! She's got fresh and nutritious down pact!

One Dish Chicken Wonder


Here is one I made last night. I was surprised at how quick the chicken cooked. I used two bone in chicken breast but as the recipe mentions you can use a variety of cut up chicken pieces. The chicken was very moist and tender. For the greens I used Swiss Chard. My first time cooking it and it had a nice taste especially when you squeeze the lemon juice over it at the end. I skipped the grain part because my hubby wouldn't eat Bulgar and just heated up some rice from the night before. He told me it was good so I hope you like it too!

The Other White Meat


This one was very yummy. The pork came out really tender with a nice sweet & tangy balance. You definitely have to use the bone in pork chops for the best results. Once again to conserve calories I skipped the mashed potatoes but they did sound yummy. The green beans reminded me of a slow cooked Sunday side dish at mom's but the whole meal was super quick to throw together. Pork is not my hubby's favorite due to the fact it can dry out but even when we reheated the next day the pork was still very moist.

Hey I have been trying some new recipes this week and wanted to share the ones I really liked with you. I love that each recipe has the nutrition info. These tacos were so flavorful I even skipped adding cheese and sour cream on mine ( of course my hubby had the works!) . One tip I learned from my Mexi-Cali cousin when cooking tacos is to use corn tortillas and to heat them in a lightly oiled pan (vegetable oil or cooking spray) till they puff and brown lightly on each side. You don't want them crispy but just lightly browned and warmed so you can fold them and stuff accordingly!!!
